Ingredients:
1/2 pound halibut or other firm white fish
3 tablespoons olive oil
2 lemons
1 shallot -- peeled
8 bay leaves

Directions:

Preheat broiler at full broil. Cut fish into small squares and put into a bowl. Pour olive oil over fish and squeeze juice of 1 lemon into bowl. Cut shallot into bowl and let fish sit in mixture for 5 minutes.

Thread fish squares and bay leaves alternately on thin wooden skewers. Place skewers on an oven sheet and put under preheated broiler, about 5 minutes. Baste fish 2-3 times while cooking, and turn skewers as fish colors. Serve immediately, with quartered lemon.
