Leek And Ham Breakfast Casserole

ingredients
1 cup thinly sliced leeks
4 tablespoons butter
5 cups French bread cubes (3/4-inch)
1 1/2 cup shredded Swiss cheese
1 1/2 cup finely chopped cooked ham
1/3 cup chopped red bell pepper
4 eggs, beaten
1 3/4 cup milk
1/4 teaspoon salt
1/4 teaspoon pepper
directions
In a medium saucepan cook leeks in butter until tender.
Lightly coat an 8x8x2-inch baking dish with nonstick cooking spray. Layer half of bread cubes in the dish. Sprinkle with leek mixture, cheese, ham and bell pepper. Top with remaining bread cubes.
In a medium mixing bowl, stir together eggs, milk, salt and pepper. Pour over bread cubes. Cover and refrigerate 2 to 24 hours.
Preheat oven to 325 degrees F. Bake, uncovered, 60 to 70 minutes or until a knife inserted near center comes out clean. Let stand 5 to 10 minutes before serving.
