Shrimp Quiche Lorraine

ingredients
1 unbaked 9" pie shell
1 small chopped onion
1 tablespoon margarine
4 eggs, lightly beaten
2 cups light cream
1 teaspoon salt
1 dash black pepper
1 dash cayenne pepper
2 cans (5 ounce size) shrimp
1/4 pound Swiss cheese, shredded
directions
Heat oven to 425 degrees F. Line pastry with wax paper.
Fill half full with rice or dried beans. Bake 7 minutes. Remove from oven. Remove paper and rice.
Reduce oven heat to 400 degrees F. Saute onion in margarine. Mix eggs, cream, salt, pepper, cayenne and sauteed onion.
Drain shrimp. Rinse and pat dry. Scatter shrimp and cheese in pastry shell. Pour in egg mixture.
Bake on bottom rack of oven for 35 to 40 minutes or until top browns and puffs. Cool 5 minute before serving.
