A can of cream of mushroom soup can be a real dinner saver. It works great in casseroles and can turn into a sauce or gravy in a pinch.
Cheese-Egg Strata

ingredients
8 white bread slices, crusts removed
8 ounces shredded mozzarella cheese
8 ounces shredded cheddar cheese
8 bacon slices, cooked and crumbled
6 eggs
3 cups milk
1/2 teaspoon salt
1 dash black pepper
directions
Heat oven to 350 degrees F. Grease a 9x13" baking dish; line bottom with bread slices. Layer mozzarella cheese, cheddar cheese and bacon.
In large bowl, beat eggs. Add milk, salt and pepper; beat until well blended. Pour over cheese and bacon mixture in dish. Bake for 45-50 minutes or until knife inserted near center comes out clean.
