3/4 cup green bell pepper, chopped
1 1/2 cup mushrooms, sliced
1 1/2 cup zucchini, sliced
3/4 cup onion, chopped
1 clove garlic, minced
1 tablespoon oil
6 eggs, beaten
1/4 cup cream or milk
1/2 pound cream cheese, diced (optional)
1 1/2 cup Cheddar cheese, shredded
2 cups bread cubes
1 teaspoon salt
1/4 teaspoon black pepper
Preheat oven to 350 degrees F.
Saute all vegetables in oil until crisp-tender. Cool slightly.
Meanwhile, beat eggs with cream or milk; add cheeses, bread, salt, pepper and vegetables. Mix well.
Pour into a greased 10-inch springform pan. Bake for 1 hour or until set in the center. Cool 5 minutes before serving.
