Apple Bacon Cheddar Bake

ingredients
1 pound bacon, fried crisp, crumbled
3 cups apples, sliced
2 tablespoons sugar
2 cups shredded Cheddar cheese
2 cups biscuit baking mix
2 cups flour, PLUS"PLUS" means this ingredient in addition to the one on the next line, often with divided uses
1 teaspoon baking powder, PLUS"PLUS" means this ingredient in addition to the one on the next line, often with divided uses
1/2 teaspoon salt
2 cups milk
5 eggs
directions
Mix apples and sugar. Layer in a 9" x 13" pan in rows. Cover apples with cheese. Sprinkle with bacon.
Beat remaining ingredients together. Using a ladle, pour evenly over apples, cheese and bacon.
Bake at 375 degrees F for 35-40 minutes until lightly browned. Serve warm.

This was actually very tasty, but a little dry. I would increase the eggs by one or two or do what you think to make it more moist. The apples are a nice touch on the bottom

This recipe had an odd mix of flavors. The apple flavor was a bit overpowering. I think it would have been a better recipe to leave the apple out all together, or use a pancake batter on top rather than the egg/ biscuit-quiche idea. The recipe also took longer than actually stated. Make sure you leave enough time to prep your ingredients (ie. fry the bacon, shred the cheese) Allow 2 hours for making the entire recipe from scratch.
