1/2 pound shredded Cheddar cheese
1 teaspoon baking powder
1/2 teaspoon salt
12 eggs
1/2 pound shredded Monterey Jack cheese
1/2 cup melted butter
1/2 cup flour
1 pint cottage cheese

Preheat oven to 350 degrees F.

Beat eggs until they are light and fluffy. Add the remaining ingredients and stir gently until well blended. Pour into a 9" x 13" baking dish. Bake for thirty minutes.

For a variety try adding 1/2 lb. cooked bacon, chopped Canadian bacon, chopped ham or chopped fresh broccoli.

This is a great tasting dish, with just one change. It really needs to cook for 40-50 minutes. I used an 9x13 airbake metal pan and at 30 minutes it was still liquidy. 10 minutes later is was solid and very tasty. So simple, so good!
