Ingredients:
10 Eggs
2 tablespoons Peanut or sesame oil
3 Shallots
OR
1 onion
4 cloves Garlic, minced
3 Dry red chilies, chopped
1 (1") pc Ginger, minced
1 Bay leaf
1/2 teaspoon Tamarind paste
1 teaspoon Sugar
1 cup Coconut milk
Salt to taste
2 tablespoons Sweet Basil, chopped

Directions:

Hard boil eggs for 10 minutes. Heat oil in wok or frying pan. Fry diced onion, garlic, chilies and ginger slowly for 10 min. Add bay leaf, tamarind, sugar, coconut milk and 1/2 cup of water, salt and cook for 5 min. Peel the eggs and slice into halves lengthwise and arrange on dish. Pour hot sauce over eggs. Garnish with basil and serve with rice.
