ingredients
1 cup sifted all-purpose flour
1 tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon salt
2 eggs
1/2 cup milk
2 tablespoons vegetable oil
6 medium firm, ripe bananas
oil, for frying
confectioners' sugar
directions
Into a small bowl, sift flour, sugar, baking powder and salt.
In another small bowl, beat eggs, milk and oil together with a rotary beater or whisk. Combine liquid ingredients with dry ingredients and stir until all flour is moistened.
Slice bananas in half lengthwise and dip into batter using fingers. Drain any excess butter.
Drop bananas into at least 2 inches hot oil (375 degrees F on deep frying thermometer) in a deep skillet or deep-fat fryer. Fry a few at a time, turning once, 2 to 3 minutes or until golden brown.
Drain on paper towels. Serve immediately, sprinkled with confectioners' sugar.
