ingredients
1 1/2 cup raw rhubarb, cut fine 1 cup brown sugar 1/2 cup white sugar 1 egg 1/2 cup butter or margarine 1 cup applesauce 1/2 teaspoon salt 1 teaspoon soda 1 teaspoon vanilla extract 2 cups flour Topping 1/4 cup sugar, MIXED WITH 1 teaspoon cinnamon
directions
In large mixing bowl, cream sugars and butter, add egg and salt. Stir in applesauce, soda, vanilla, and flour. Add rhubarb.
Pour in prepared 9- x 13- x 2-inch baking pan and sprinkle topping mixture. Bake at 375 degrees F for 30 to 35 minutes. The cake is very moist and needs no frosting.
This cake is extra fabulous with adding some crystalized ginger to the batter, and powdered ginger to the topping. Makes the whole thing ... zingier!

I made this cake this morning at 6 a.m. to take to work since I had totally forgotten to make anything last night. I was so thrilled when everyone wanted seconds and then 'demanded' the recipe.
