Meatballs And Rice Skillet Dinner

ingredients
1 tablespoon margarine or butter
1 package (8 ounce size) beef-flavored rice and vermicelli mix
2 1/3 cups water
1 package (8 ounce size) cooked meatballs
2 cups frozen broccoli cuts, thawed
1/2 cup red bell pepper strips
directions
Melt margarine in large skillet over medium heat. Add rice mix; cook and stir until lightly browned. Add water, contents of seasoning packet from mix and meatballs. Bring to a boil. Stir; reduce heat to medium-low. Cover; cook 15 minutes.
Add broccoli and bell pepper to skillet. Cover; cook over medium heat 7-9 minutes or until broccoli is crisp-tender and rice is tender. Stir to fluff rice before serving.

I had some random things in my kitchen and found this recipe to use for dinner and it was a huge hit with my young children and husband! I used rice pilaf and it was a little buttery tasting, I'll try the beef next time. Fast, easy, and yummy!
