Crunch Covered Ice Cream Recipe

Ingredients:
1 stick butter
2/3 cup brown sugar
3 cups cornflakes
1 1/3 cup grated toasted coconut
4 large scoops vanilla ice cream
Fresh or canned peach slices
Directions:
Melt butter in a saucepan. Add the brown sugar. Cook, stirring, about 5-7 minutes or until well blended and the sugar is dissolved and the mixture is bubbly. Remove from heat. Stir in corn flakes and coconut until well-coated.
Arrange ice cream scoops in dessert dishes. Top with the coconut crunch. Add peach slices.
