Red Honey Basted Apples

ingredients
3 large baking apples
1/2 cup water
1/4 cup honey
1/2 teaspoon grated lemon rind
3 drops red food coloring (as needed)
directions
Pare, halve, and core apples. Place, cut side down, in shallow baking dish.
Mix water, honey, lemon rind and food coloring in 1-cup measure; pour over apples; cover.
Bake in a hot oven (400 degrees F), basting once or twice with syrup in dish, for 30 minutes. Uncover and baste apples again. Bake 15 minutes longer, or until tender but still firm enough to hold their shape.
Cool apples in baking dish, basting once or twice to make a rich glaze. Garnish with a sprig of mint if you like. Serve warm.
