Colonial Baked Apples

ingredients
3 medium sweet potatoes
1/2 teaspoon finely shredded orange peel
2 tablespoons orange juice
1 tablespoon brown sugar
1 tablespoon butter
1/4 teaspoon ground nutmeg
1 beaten egg
1/2 cup corn syrup
2 tablespoons lemon juice
8 large cooking apples
directions
Cook sweet potatoes in enough boiling water to cover for 25 to 35 minutes until tender.
Drain, peel and cut up. Puree in blender or food processor until smooth. Add peel, orange juice, sugar, butter and 1/4 teaspoon salt. Add egg and milk, then set aside.
Cut and remove a slice from top of each apple. Fill each apple with sweet potato mixture. Place apples in a 12- x 8- x 2-inch pan. Stir corn syrup and lemon juice together. Pour over apples.
Bake uncovered at 325 degrees F for about 45 minutes. Baste several times with juices.
