Light Apple Cobbler

ingredients
6 cups apples, peeled and chopped
1/2 cup brown sugar, packed
1 tablespoon cornstarch
1 1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 cup flour
1/2 cup sugar
1 teaspoon baking powder
1 egg, beaten
1/2 teaspoon vanilla extract
2 tablespoons oil
non-stick cooking spray
directions
Preheat oven to 350 degrees F and spray a 9" baking dish with vegetable oil spray.
In a medium bowl, mix apples with brown sugar, cornstarch, cinnamon and nutmeg. Place this mixture in baking dish.
Combine flour, sugar, and baking powder. Add the egg and vanilla, stirring until well distributed. Dribble in the oil and mix with a spoon until crumbly. Put this flour mixture on top of the apples.
Bake uncovered at 350 degrees F for 40 minutes.
