Baked Bean Soup Recipe

Serves/Makes: 4
Ingredients:
2 tablespoons olive oil
1 chopped onion
5 teaspoons chili powder
1 1/2 teaspoon dry mustard
2 cups water
1 can (15-oz. size) cannellini beans, rinsed and drained
1 can (14-1/2 oz. size) chopped stewed tomatoes - with juice
3 tablespoons (light) molasses
Directions:
Heat oil in heavy large saucepan over medium heat. Add onion and cook until soft, about 8 minutes. Add chili powder and mustard and stir 1 minute.
Add water, beans, tomatoes with their juices and molasses.
Simmer soup 15 minutes, stirring occasionally.
Season with salt and pepper.
For a thicker soup, remove one cup of the beans, mash them to a paste, then stir them back into the soup.
