Squash And Tomato Saute Recipe

Ingredients:
2 small yellow squash
2 small zucchini squash
1 tablespoon olive oil
1 can (14-1/2 oz. size) whole peeled tomatoes, drained
1 tablespoon butter or margarine
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
Directions:
Cut squash into 1/4-inch thick strips. Heat oil in large skillet over high heat. Add squash strips, stirring to coat. Cook until tender and browned and most of the juices from squash are evaporated, 5 minutes.
Cut tomatoes into quarters and add to skillet with butter, salt and pepper. Cook over medium heat until flavors are blended, about 2 minutes.
