Ingredients:
5 medium yellow crookneck summer squash, sliced
1/4 cup water
2 tablespoons bacon drippings or butter
2 tablespoons chopped Vidalia or sweet type onion
2 eggs, beaten
2/3 stick butter, melted
2 tablespoons granulated sugar
1/2 teaspoon table salt
1/8 teaspoon black pepper
4 ounces diced pimentos, drained
1/2 cup milk
3/4 cup Saltine Crackers Crumbled fine
2 tablespoons butter, cut into small pieces
1 cup shredded sharp cheddar cheese

Directions:

Preheat the oven to 325 degrees F.. Boil the squash in a very little bit of water with lid on until almost tender. Remove lid, add butter or bacon drippings and let water cook out of squash. In a bowl, combine squash, onion, eggs, butter, sugar, salt, pepper, pimentos, milk and cracker crumbs. Pour into a greased 8-by-8-inch baking dish. Bake uncovered for 20 to 25 minutes. Dot with butter and cover with cheese. Cook for 10 more minutes.
