Ingredients:
1/2 cup finely chopped onion
1 tablespoon margarine
3 cups winter squash, cooked and mashed
OR
2 packages (12 ounce size) frozen squash, thawed
1/2 cup grated cheese (part-skim mozzarella)
1/4 teaspoon pepper

Directions:

Preheat oven to 400 degrees F.

Saute onions in margarine until tender. Combine all ingredients.

Place in a 1-quart casserole. Bake uncovered 35 to 45 minutes.
