Add an extra layer of deliciousness to your desserts with this rich, shiny chocolate glaze.

2 ounces unsweetened chocolate, chopped
1/4 cup butter, cut in bits
Combine the chocolate and butter in the top of a double boiler over simmering, not boiling, water. Stir constantly until melted.
Remove the pan from the heat and let cool slightly. Pour the glaze over a layer of icing on a cake or over cheesecake or other firm dessert.

the glaze is beautiful to work with, just remember to wear something over your hand, no need to have burns from the steam.
