ingredients

2 eggs
1/4 cup sugar
1 cup flour
2/3 cup yellow cornmeal
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup plain yogurt
1/4 cup melted margarine

directions

Beat eggs and sugar in bowl until blended. Set aside.

In another bowl, stir together flour, cornmeal, baking powder, baking soda, and salt.

Add yogurt and melted margarine to egg mixture, then add flour mixture. Stir until batter is evenly moist. Don't over-mix.

Spoon batter equally into paper lined or well-greased muffin tins. Bake at 400 degrees F for 18-20 minutes.

Option: Use 8" round pan instead of muffin tins. Bake at 350 degrees F.
