2 slices lean side bacon, chopped 1 large yellow onion, chopped 2 tablespoons flour 3 cups chicken stock 2 cups water 4 large boiling potatoes, peeled and chopped 1 cup grated Cheddar cheese 1/2 teaspoon Worcestershire sauce salt and pepper
Cook bacon in large saucepan over medium heat, stirring, until crisp. Spoon off all but 2 tablespoons of melted fat.
Add onion (1-1/2 cups), cook over medium-high heat, stirring, until golden. Stir in flour and cook, stirring, 2-3 minutes.
Stir in stock slowly scraping bottom of pan, stir in water, bring to a boil. Add potatoes and simmer, covered 10 minutes or until just tender.
Stir in cheese, Worcestershire sauce and transfer to food processor blender. Process until smooth.
Return to saucepan, heat through. Season with salt and pepper.
