Ingredients:
3 tablespoons butter or margarine, divided
1/2 cup chopped onion
1/2 cup chopped celery
4 cups whole milk
1 teaspoon salt
Pepper
3 tablespoons all-purpose flour
2 large potatoes, baked, peeled and cut into 3/4-inch cubes
1 cup shredded Cheddar cheese
6 slices bacon, cooked crisp and crumbled
1/2 cup sour cream
Chopped green onions

Directions:

Melt 1 tablespoon butter in a large saucepan over medium heat; add onion and celery and saute until tender. Stir in milk, salt and pepper; bring almost to a boil, stirring occasionally.

Melt remaining 2 tablespoons butter in a small saucepan; whisk in flour. Cook 3 minutes, whisking constantly, until thickened; whisk into milk mixture.

Cook, stirring constantly, until thickened. Stir in potato; cook, stirring often, until thoroughly heated.

Spoon soup into serving bowls; top evenly with cheese, bacon and sour cream, or pass garnishes in small bowls and let guests serve themselves.
