INGREDIENTS:
1 can Skim evaporated milk
2 tablespoons cornstarch
1 tablespoon Liquid sugar replacement
1/2 cup chocolate chips
3 ounces cream cheese, softened
1 1/2 teaspoon vanilla extract
DIRECTIONS:
Combine evaporated milk, cornstarch, sugar replacement and chocolate chips in saucepan. Cook and stir mixture is thick and chocolate chips are melted. Whip cream cheese until light and fluffy. Beat into chocolate/mixture. Stir in vanilla extract. Turn into buttered 8-in square baking dish. Chill until firm. Cut into 1-in squares. Store in refrigerator.

I live in NZ and I couldn't find unsweetened chocolate chips so I used a 100g block of sugar free dark chocolate. I used about half a tablespoon of liquid stevia. I wasn't sure of the size of the evaporated milk tin, so I just used our standard tin of 375ml. The result was a rubbery, cheesecake type consistency of a fudge that I couldn't cut into pieces! It tastes nice...like a chocolate cheesecake but didn't set like fudge. Nice dessert!
