It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).
Beef Gorditas

ingredients
3/4 pound 93% lean ground beef
1/4 cup frozen diced onions
1 envelope (1.25 ounce size) taco seasoning mix
1 can (4.5 ounce size) chopped green chiles, drained
4 flat bread rounds or pitas
1 medium tomato
1/4 cup sour cream
1/2 cup shredded lettuce
1/4 cup shredded cheddar cheese
4 teaspoons sliced black olives, drained
directions
Place large saute pan on high heat. Place beef, onions, taco seasoning and green chilies in pan. Brown ground beef 5-7 minutes until meat is brown and no pink remains. Stir frequently and break up meat as it cooks.
Place flat breads on microwave-safe plate (may be paper) and microwave on high for 30 seconds, or until softened.
Wash and dice tomato. Spread 1 tablespoon sour cream over each bread. Sprinkle each with lettuce, cheese, tomatoes and olives. Divide meat mixture evenly. Fold in half and serve.
