1/2 cup butter, at room temperature 1 cup granulated sugar plus 1 teaspoon granulated sugar 2 large eggs 1 cup all-purpose flour 1 teaspoon baking powder 1 1/4 pound Italian or prune plums, quartered 1 tablespoon lemon or lime juice pinch cinnamon
Cream together butter and 1 cup sugar until well blended; beat in eggs, then flour and baking powder. Beat to mix well; turn into buttered 9 inch springform pan.
Place plum quarters on top of batter, close together in circles starting at the outside, in a flower or petal pattern. Sprinkle with lemon juice.
Mix remaining sugar with cinnamon; sprinkle over top.
Bake in centre of 350F oven for 1 hour or until cake tester inserted in centre comes out clean and top is golden brown. Serve warm or cold with whipped cream, slightly sweetened low fat plain yogurt or vanilla ice cream.
