Baked Pineapple Pudding

This delicious dessert is also known as scalloped pineapple or pineapple stuffing because of the bread in it. It's thick like bread pudding but with tropical flavors.
ingredients
3 eggs, beaten
1/2 cup butter
1 cup white sugar
1 can (20 ounce size) crushed pineapple with juice
1/2 cup milk
4 cups soft bread cubes
1/4 teaspoon vanilla extract
directions
Preheat oven to 375 degrees F.
In a mixing bowl, cream together butter and sugar. Add eggs, milk, pineapple and juice, bread cubes, and vanilla. Mix together. Bake in a 2 quart casserole dish for 45 minutes.

I think I would have liked bigger chunks of pineapple instead of the crushed. I'll use tidbits next time. Otherwise pretty good.

I made this recipe today....wow...it was very good....after pudding cooked I sprinkled brown sugar on top and place under the broiler for a couple minutes....it really added a good flavor to the pudding and a crunch on top....thanks for sharing this recipe.....
