Berry Claufouti With Creme Fraiche

1/3 cup sugar
1/2 vanilla bean, split and seeds scraped out to use
1 tablespoon vanilla extract
3 tablespoons flour
1 pinch salt
2/3 cup creme fraiche or sour cream
1/3 cup milk
1 pint mixed berries
1 tablespoon confectioners sugar and extra for dusting
Preheat oven to 350 degrees F.
Whisk together eggs and sugar until frothy. Add vanilla, flour, salt, and mix. Fold in milk and 1/2 of the creme fraiche or sour cream.
Spray 10" non-stick pan, or use individual ramekins, with vegetable spray. Pour 1/3 of the batter in pan(s). Bake in oven for 3 minutes, just until the batter is set.
Remove pan from oven and spread berries evenly. Pour remaining batter over berries. Return pan to oven and continue baking for 12-16 minutes or until edges start to brown and middle rises.
Take out and cool for up to 20 minutes, or serve hot.
Mix remaining 1/3 cup creme fraiche or sour cream with the measured confectioners sugar.
Serve cut into wedges or in individual dishes with extra berries on top. Dust with confectioners sugar.
