ingredients

2 grapefruits, peeled and sectioned
1/3 cup brown sugar
1 vanilla bean, split and seeds removed
2 egg whites
1/4 cup white sugar
4 scoops good vanilla ice cream

directions

Preheat oven to 450 degrees F.

Remove sections of grapefruit over bowl to catch the juice. When done sectioning squeeze remaining grapefruit to get all the juice out.

Take vanilla bean and make a slit down the middle. Open up with fingers and place on flat surface. Take sharp knife and pressing firmly with blade scrape the length of the bean to remove seeds. Put in bowl with grapefruit and juice.

Add brown sugar and toss well. Divide among ramekins.

Beat egg whites till soft peaks. Add white sugar and beat till stiff peaks.

Top each ramekin with a scoop of ice cream. Divide egg whites among the ramekins.

Bake until golden brown, about 8 minutes, checking after 6 minutes.

This is a refreshing dessert in the middle of a cold winter. It kind of gives you the appearance of a healthy dessert while still being sweet and creamy.
