Fluffy Potato Bake Recipe

Ingredients:
3 pounds potatoes, peeled and quartered
1/4 cup butter
1/4 cup chopped onion
1 1/2 cup cottage cheese
1/4 cup chopped fresh parsley
1 teaspoon salt
Directions:
In a saucepan, cook potatoes in water until done. Mash and set aside.
Preheat oven to 350 degrees. In a small skillet, heat butter and sauté onion until soft. Mix into potatoes along with cottage cheese, parsley and salt. Spoon into buttered two-quart casserole.
Bake 30 minutes until heated through and browned. Garnish with additional parsley.
