ingredients

1 1/4 cup butter
2 cups sugar
2 eggs
2 teaspoons vanilla extract
2 3/4 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup sugar, for coating

directions

Heat oven to 350 degrees F.

Beat butter and 2 cups sugar until light and fluffy. Beat in the eggs 1 at a time. Blend in the vanilla.

Stir together flour, baking powder and salt. Gradually stir into butter mixture, just until blended. Roll dough into walnut-sized balls and roll in the extra sugar.

Place cookies 2 inches apart on ungreased cookie sheets and flatten slightly with the bottom of a glass that has been dipped in sugar.

Bake 8 to 10 minutes, or until edges are lightly browned. Cool on cookie sheets 5 minutes; then remove to wire rack and cool completely.
