Homemade Spaghetti Sauce
INGREDIENTS:
1 pound ground beef
4 sweet Italian sausage
4 hot Italian sausage (cut in half so you know which is which!)
2 large onions, chopped
2 cloves garlic, minced (or more to taste)
2 (6 oz.) cans tomato paste
2 (28 oz.) cans crushed tomatoes
garlic salt
oregano
basil
bay leaf
black pepper
DIRECTIONS:
Brown ground beef, drain, and set aside. In large pot brown sausage in extra virgin olive oil. Add onion and saute until translucent. Add minced garlic, stir it around a few times and add tomato paste. Let the tomato paste caramelize, stirring occasionally it takes the bitterness away I never have to add sugar to my sauce. Add 2 cans of water and stir until blended, then add the crushed tomatoes and ground beef. I don't measure my spices so this can be the tricky part :-). Add garlic salt, pepper, about 1 or 2 tablespoons each of basil and oregano, 1 or 2 bay leaves. Simmer for several hours, the longer the better, until desired thickness. The hot sausage will make the sauce a bit spicy, so if you don't like it that way, use all sweet sausage.
