ingredients

4 tablespoons butter
4 tablespoons flour
1 cup chicken stock
2 cups heavy cream
1/2 teaspoon salt
2 pinches nutmeg

directions

Melt butter in a saucepan or on top of a double broiler over moderate heat. Whisk in flour and cook until mixture is foamy.

Whisking constantly, stir in chicken stock, cream, salt and nutmeg. Bring to a boil and simmer, stirring until thickened, 3 to 5 minutes.
