Seven-Minute Frosting Recipe

Difficulty: 2 (1=easiest :: hardest=5)
Serves/Makes: 2.5 cups
Ingredients:
1 egg white
3 tablespoons water
1/8 teaspoon cream of tartar
3/4 cup sugar
1 dash salt
Directions:
In the top of a double boiler, combine all ingredients. Stir to blend. Set aside 15 minutes or until sugar has dissolved. Place over boiled water and beat at high speed with a hand electric mixer until mixture stands in peaks. This will take about 7 miutes. Remove from heat and stir.
Note: 2 1/2 cups frosting is enough to frost a 2-layer cake.
