Frozen Strawberry Squares Recipe

Serves/Makes: 1 dozen
Ingredients:
***Crust***
1 cup sifted flour
1/4 cup brown sugar
1/2 cup chopped walnuts
1/2 cup butter -- melted
***Filling***
2 egg whites
1 cup sugar
2 cups sliced fresh strawberries
2 tablespoons lemon juice
1 cup whipping cream -- whipped
strawberries -- for garnish
Directions:
Note: This recipe contains uncooked egg whites. Caution people with allergies. Use only the freshest eggs or egg white replacement product.
For Crust: Stir together all ingredients and spread evenly in a shallow baking pan. Bake at 350F degrees for 20 minutes, stirring occasionally. Cool and stir to break up into a crumb mixture. Sprinkle 2/3 of the crumb mixture into a 9 x 13 x 2-inch pan.
For Filling: In a large bowl, combine egg whites, sugar, strawberries and lemon juice; beat with an electric mixer on high speed until stiff peaks form. Fold in whipped cream. Spoon whipped cream mixture over crumbs. Top with remaining 1/3 of the crumb mixture. Freeze for 6 hours or overnight. Cut in squares. Garnish with strawberries.
