Ingredients:
1 can (14 3/4 oz.) canned salmon
2 cups soft bread crumbs
1/3 cup finely minced onion
1/4 cup milk
2 eggs
2 tablespoons minced parsley
1 tablespoon lemon juice
1/4 teaspoon each salt & dill weed
1 dash pepper

Directions:

Salmon patties: Drain salmon, reserving 2 tablespoons liquid; flake. Combine all ingredients including the 2 tablespoons of liquid. Shape into 8 1-inch thick patties. Pan-fry on both sides in 2 tablespoons oil or butter until golden brown.

Salmon loaf: Drain salmon, reserving 2 tablespoons liquid; flake. Combine all ingredients including the 2 tablespoons of liquid. Place in a well-greased 8-1/2 x 4-1/4 x 2-1/2 inch loaf pan or shape into loaf on a greased baking sheet. Bake at 350 for 45 minutes.
