INGREDIENTS:

1 1/2 cup uncooked spiral pasta
1/2 cup mayonnaise
1/3 cup milk
1/2 teaspoon salt
1/2 teaspoon dried basil
2 cups frozen mixed vegetables, thawed
1 1/2 cup cubed cooked chicken
1 1/2 cup shredded cheddar cheese, divided


DIRECTIONS:

Cook noodles according to package directions. Meanwhile, in a bowl, combine the mayo, milk, salt, and basil. Stir in the vegetables, chicken and 1 cup cheese. Drain the pasta; stir into vegetable mixture. Transfer to a greased 1 1/2 qt. microwave-safe dish. Sprinkle with the remaining cheese.

Cover and microwave on high for 5 to 6 minutes or until heated through and the cheese is melted. Let stand for 5 minutes before serving.

This was good and easy, made with my daughter. I didn't have spirals, so I used macaroni.

This was so good. I used canned mixed veggies (drained) and multi grain penne pasta. Since I cooked the chicken in the crock pot, putting this together was so easy. It has a rich taste but you cannot distinguish the mayo.

As simple as this dish was, it had a delicious flavor. i did substitute seasoned salt for the salt and "italian seasoning" for the basil. i tend to shy away from hot mayo-based dishes, but this one is very very good, and you'd never know it was mayo! i was pleasantly surprised! Yummy!
