Sugar Crumpets Recipe

Serves/Makes: 4 dozen
Ingredients:
1 cup shortening
1 1/2 cup sugar
2 eggs
2 3/4 cups flour
2 teaspoons cream of tarter
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons sugar
2 teaspoons cinnamon
Directions:
Preheat oven to 400 degrees F. Beat the shortening, 1 1/2 C sugar, and eggs together in a large bowl until thoroughly blended. Stir in the flour, cream of tarter, baking soda and salt.
Roll dough into balls the size of small walnuts. Roll balls in a mixture of the cinnamon and sugar. Place about 2-inches apart on an ungreased cookie sheet.
Bake 8-10 minutes until lightly brown. Let cool before serving.
