Filled Sugar Wafers Recipe

Serves/Makes: 1 dozen
Ingredients:
1 cup all-purpose flour
1/8 teaspoon salt
1/3 cup butter, cut up
1/4 cup light cream
1/3 cup granulated sugar, to dust
***Pink Filling***
1 cup confectioners' sugar
1 tablespoon butter, softened
1 tablespoon light cream
1/2 teaspoon vanilla extract
3 drops red food coloring
Directions:
Sift the flour and salt into a large bowl. Use a pastry blender to cut in the butter until the mixture resembles coarse crumbs. Mix in the cream. Press the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.
Preheat the oven to 375°F. Line two cookie sheets with parchment paper. Roll out the dough on a lightly floured surface to a thickness of 1/8 inch. Use a 11/2 inch cookie cutter to cut out the cookies. Gather the dough scraps, reroll and continue cutting out cookies until all the dough is used.
Use a spatula to transfer the cookies to the cookie sheet, spacing them 1 1/2 inches apart. Sprinkle with the sugar. Bake for 8-10 minutes, or until just golden at the edges, rotating the sheets halfway through for even baking. Transfer to racks to cool.
Pink fillinq: Mix the confectioners' sugar, butter, cream, vanilla, and red food coloring in a small bowl. Stick the cookies together in pairs with the filling.
