Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

2-5 hrs
ingredients
3/4 cup butter, softened
1 package (3 ounce size) cream cheese, softened
1/2 cup granulated sugar
1 teaspoon vanilla extract
1 1/2 cup all-purpose flour
1 package (8 ounce size) soft-style cream cheese with strawberries
fresh strawberries, halved (optional)
directions
In a medium mixing bowl beat butter and plain cream cheese with an electric mixer on medium to high speed for 30 seconds. Add sugar and vanilla. Beat until combined, scraping sides of bowl occasionally. Using a wooden spoon, stir in the flour.
Divide dough in half. Shape each half of dough into a 6-inch-long roll. Wrap rolls in plastic wrap or waxed paper. Chill in the refrigerator for 4 to 48 hours.
Using a sharp knife, cut dough into 1/4-inch-thick slices. Place slices 2 inches apart on an ungreased cookie sheet.
Bake in a 375 degrees F oven for 8 to 10 minutes or until edges are lightly browned. Cool on cookie sheets for 1 minute. Transfer to wire racks to cool completely.
Just before serving, spread cookies with strawberry cream cheese and, if desired, top with strawberry halves.

nutrition data
Not to be confused with evaporated milk, sweetened condensed milk is very sweet (and very sticky) and used primarily in desserts.
A can of cream of mushroom soup can be a real dinner saver. It works great in casseroles and can turn into a sauce or gravy in a pinch.
