Ingredients:
1/2 cup butter or margarine
1/2 cup sugar
1 large egg
1 teaspoon vanilla
1 3/4 cup all-purpose flour
3/4 cup finely chopped red and green candied cherries
sugar -- optional
***Cherry Frosting***
3 ounces chream cheese -- softened
2 cups sifted powdered sugar -- separated
1/4 teaspoon vanilla
1/4 cup finely chopped red or green candied cherries

Directions:

BEAT butter or margarine in a large mixing bowl with an electric mixer on medium to high speed for 30 seconds. Add the 1/2 cup sugar. Beat till combined, scraping sides of bowl occasionally. Beat in egg and vanilla till combined. Beat in as much flour as you can with the mixer. Stir in remaining flour and the candies cherries with a wooden spoon.

SHAPE dough into 1-inch balls. Place balls 2 inches apart on an ungreased cookie sheet. Flatten each ball by crisscrossing with the tines of a fork. If desired, Sprinkle each cookie with sugar. Bake in a 375 F oven about 8 minutes or till edges are golden. Transfer cookies to wire racks and cool.

Spread flat sides of half of the cookies with Cherry Frosting. Top with remaining cookies, flat side down, to form yo-yos. Store in a covered container on the refrigerator.

CHERRY FROSTING: Beat cream cheese, in a medium mixing bowl till fluffy. Gradually add 1 cup powdered sugar, beating well. Add 1/4 teaspoon vanilla. Beat in 1 cup additional powdered sugar to make frosting of spreading consistency. Stir in `/4 cup finely chopped red or green candied cherries Makes about 1/4 cup.
