ingredients
6 cups cooked mashed sweet potatoes
2 eggs
1/4 cup brown sugar
1/4 cup melted butter
1 teaspoon salt
1 teaspoon cinnamon
orange juice, as needed
1 cup pecan halves
1/2 cup brown sugar
1/4 cup melted butter
directions
Beat eggs, brown sugar, butter and salt and cinnamon into mashed sweet potatoes. (If potatoes seem dry, beat in orange juice as needed until moist and fluffy.)
Put into 1 1/2 quart casserole. Arrange pecans on top, sprinkle with brown sugar and drizzle with melted butter. Bake uncovered in 375 degrees F oven for 20 minutes.

This recipe is Great! It is easy to make and taste perfect. I prepared it for Thanksgiving and Christmas and I'm seriously considering it for Easter.
