Pressure Cooker Bourbon Laced Sweet Potatoes

ingredients
3/4 cup orange juice
1 orange, zested
1/4 cup bourbon (or substitute bourbon for more orange juice)
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
5 large sweet potatoes, peeled and cut into 1/4" slices
1/3 cup orange marmalade
2 tablespoons sweet butter cut into bits
salt, to taste
1/3 cup walnuts, coarsely chopped
directions
Combine the orange juice, zest, bourbon, cinnamon, and nutmeg in a pressure cooker. Place the sweet potato slices in the liquid and top with the marmalade and butter.
Lock the lid in place and over high heat bring to high pressure. Adjust heat to maintain high pressure and cook 2 minutes. Reduce pressure with a quick release method.
Adjust the seasoning, adding salt to taste as you stir in the walnuts and create a coarse mash. Transfer to a heated serving bowl and serve immediately.
