Asian Flavored Sweet Potatoes Recipe

Serves/Makes: 2
Ingredients:
1/4 cup short hijiki
2 tablespoons oil
12 ounces sweet potato, peeled and julienned (1/4 inch thick)
1/4 cup dashi or water
1/2 teaspoon salt
1 tablespoon honey
2 tablespoons mirin
1 tablespoon soy sauce
1 tablespoon toasted sesame seeds
Directions:
Soak hijiki in a lot of warm water for 30 minutes. Drain and rinse.
Heat oil over medium heat. Add sweet potato and stir-fry for about 2 minutes. Add hijiki and stir-fry for another 2 minutes or so. Add dashi (or water), salt, honey, mirin, and soy sauce and bring to a boil. Cover and cook for about 5 minutes. If necessary, uncover and cook, stirring, until almost all of the liquid has evaporated. Serve warm or at room temperature, sprinkled with toasted sesame seeds.
