Have been making this dish for almost 40 years. The recipe I use differs slightlyA(just amounts of ingredients), but overall the taste would be the same. I've been asked to bring it to many church gatherings, etc. and had so many requests for recipe I've lost count! One of our favorites..

i made this recipe for a reunion and added 2 cans of chili and man it was all gone when i went to get some Glad i had made it at home before My family loves it. My daughter tops it with sour cream but ots good with out it too Thanks Debbie In Florida
Eggplants are a good source of potassium. If you find them to be too bitter, try buying smaller ones and sprinkle the flesh with salt and let it drain before cooking. This is a common reason why people shy away from eggplant but it is so easily remedied!
