2 containers (8 ounce size) plain yogurt
1 package (4 serving size) dry sugar-free vanilla pudding mix
1/4 cup grated coconut, optional
1/2 cup crushed pineapple, drained
1 teaspoon coconut extract
1 teaspoon rum extract
1 cup low fat frozen whipped topping, thawed
bite sized pieces of fresh fruits (such as pineapple, strawberries, kiwi, grapes, etc.)
Combine the yogurt and pudding mix in a mixing bowl and beat on medium speed with an electric mixer. Mix until the pudding mix is incorporated into the yogurt.
Stir in the pineapple, coconut extract, and rum extract. Fold in the whipped topping.
Cover the bowl and chill for 1-2 hours or until thickened.
Serve the pina colada dip with fresh fruit for dipping.
