Bellue's Lowfat Jambalaya Recipe

Serves/Makes: 6
Ingredients:
1 1/2 pound Smoked Sausage (cut in 1 inch rounds)
1 cup onions, finely chopped
1/3 cup bell pepper, finely chopped
1 can (14.5 oz size) chicken broth
1 can (16 oz size) pureed tomatos
1/2 teaspoon granulated garlic
1/4 teaspoon red pepper
2 teaspoons salt (to taste)
1 1/2 cup uncooked rice
Directions:
Lightly brown sausage in thick bottomed 6 qt. or larger pot. Drain off all but 2 tablespoons of the drippings. Add onions and bell pepper, saute until onions are clear. Add remaining ingredients and bring to a rolling boil, stirring continuoulsy.
Reduce heat to simmer, cover and cook 20 minutes.
