Ingredients:
3 pounds lamb chops, trimmed & deboned
2 pounds potatoes
1 pound onions
1/2 tablespoon chopped parsley
1/2 tablespoon fresh thyme
2 cups water
salt & pepper to taste

Directions:

Cut meat into pieces. Peel and slice potatoes and onions.

Layer half of the potatoes in saucepan, then half of the meat and herbs, and finally half of the onions. Season each layer to taste and repeat the process.

Pour water over, cover with a sheet of foil and well as the lid, and simmer gently for about 2 hours, occasionally shaking the pan to prevent sticking. Add liquid if it seems too dry, but a good Irish stew should be thick and not like a soup.
