Ingredients:
2 pounds lamb cubes, about 1 inch square (choose organic or grass-fed meat)
1 teaspoon crushed red pepper
1 teaspoon cinnamon
1 teaspoon salt
2 tablespoons olive oil
2 onions, chopped
4 cloves garlic, minced
1 can (14 oz. size) condensed beef broth
1/2 cup water
1 tablespoon cornstarch
2 tablespoons cold water
1 cup pitted dates, chopped (dried fruits are already sweet enough; choose ones that don’t have extra sugar added)
1 cup dried apricots, chopped
1 apple, chopped (since you’ll use the skin, go for organic)

Directions:

Combine red pepper, cinnamon and salt. Coat lamb cubes with spice mixture. In large skillet, heat olive oil and sauté lamb.

Transfer meat to crockpot. Add onion and garlic. Pour beef broth and water over meat. Cover and cook on LOW for 7-9 hours until meat is tender.

Combine cornstarch and cold water in a small bowl; mix well. Stir into crockpot. Add dates, apples and apricots to crockpot and stir.

Cover and cook on high for 30-40 minutes or until mixture is thickened.
