Ingredients:
1 tablespoon olive oil
1 pound boneless, skinless chicken breast, cut into cubes
1/2 cup chopped onion
1 cup chicken broth
1 can (4-ounce size) chopped green chilies
1 teaspoon garlic powder
1 teaspoon ground cumin
1/2 teaspoon oregano leaves
1/2 teaspoon cilantro
1/4 teaspoon ground red pepper (or to taste)
1 can (19-ounce size) white kidney beans (cannelloni), undrained
Shredded Monterey Jack Cheese (optional garnish)
Sliced green onions (optional garnish)

Directions:

Heat olive oil in a 3-quart saucepan over medium-high heat. Add chicken; cook 4 to 5 minutes. Remove chicken, cover and keep warm.

Add chopped onions to saucepan. Saute for 2 minutes. Stir in other ingredients, except the chicken and kidney beans (and optional garnishes). Simmer for 30 minutes. Then add chicken and kidney beans. Simmer 10 minutes and serve in bowls with optional garnish.
